Our Story

Chewology celebrates Taiwanese comfort food through the lens of Kansas City. We partner with local farms, makers, and food producers to bring Midwest ingredients into dishes inspired by Taiwan’s street markets, family tables, and night-market flavors.

Dumplings are where our story began. For chef Katie, folding dumplings around the table with family and friends is one of her fondest childhood memories. That feeling — joyful, handmade, nostalgic, and shared — is the heart of Chewology.
